The Best Blueberry Protein Pancakes
You know when you're just craving some fluffy, moist, delicious protein pancakes? Yeah. That was me. But every other recipe I've tried is so rubbery and gross.. so I took matters into my own hands with these ah-maaaaazing Blueberry Protein Pancakes.
1 Serving Kodiak Cakes Pancake Mix (1/2 Cup)
1/2 Scoop Core Nutritionals Cinnamon Roll Whey Protein
1 TSP Vanilla
1/2 TSP Baking Powder
Almond Milk for Consistency (about 1/4 cup-ish)
1/2 Cup Blueberries
Optional toppings: Almond Butter, Walden Farms
Mix dry ingredients first. Add wet, and mix until it's thick but slightly runny. This consistency will make sure your pancakes aren't too thick and dense. Spray a *non-stick* pan with cooking spray or if you like, coconut oil. Pour on about 1/3 cup of batter to the pan, and place a few blueberries on the batter. Cook on medium heat until bubbles begin to pop through the batter and the pancake is solid enough to flip. Let cook just 2-3 seconds on the second side before taking it out of the pan (don't want to overcook this or it will be tough). Repeat until all batter is used. Top with your favorite toppings and enjoy!
